I've been watching the market for a week now to find one of these dishes but there were none:
Dish : Anchovy in escabeche -> 3 points de reflexion
Dish : Sea bass in escabeche -> 4 points de reflexion |
Plat(s) : Porcini to the sauce royale -> 2 points de reflexion
I am planing a trip to France to get the dishes I need. Does someone else needs something and can't find it here ?

It is true that these dishes to make the grower needs a bottle of vinegar.
Knowing it takes two days to make one. The dishes are not profitable. As a winemaker I produce mainly wine. Sorry !

Maybe it's possible to make them profitable by working together? I'm a winemaker myself, and I don't really make wine or any other dishes anymore, because I don't need them (to level), but if needed I can start producing again. I'll look at it.

What should be the price for vinegar to make it profitable ?
I can't see the market now as I am on the road but I believe I saw bottles with about 38 louis in Paris.

A bottle of wine (28) + a bunch of grapes ( 8 ) + a salary of 20 = 56
Suffice to say that nobody will sell a bottle at this price!

Thanks. I'm now in Reims and here's no vinegar in the market. In my way back to London I'll stop again to Paris, if someone need anything that cannot be found in London please let me know.
I also bought a diligence and I'm traveling faster now Very Happy
